Mushroom and cheese stuffed eggplant
Then sauté eggplant pulp until tender.
Add the mushrooms, salt and pepper, sauté for some minutes and remove from heat.
Preheat oven to 400 ºF (200 ºC).
Spoon this mixture into eggplant shells.
In a large bowl mix the cheeses, eggs and milk, add salt and black pepper to taste. Cover the eggplant shells with this, sprinkle with oregano and place in the oven.
Bake until cheese is melted and enjoy!
